12 Cups Chopped Tomatoes. We use Roma because they are fleshier and sweeter.
8 cups Chopped Green Bell Peppers ( remove the seeds )
3 cups Chopped Onions
1 cup Hot Peppers. We used a combination to Jalapenos, Anaheim and Hot Banana Peppers. You can use your favorite. ( remove the seeds to make it not as spicy )
1 cup of Cider Vinegar. This is really important. Plain white vinegar just does not taste the same. (This is my alteration from the original which called for 1.75 cups of Cider Vinegar)
2 Tbs. Chopped Garlic.
3 Tbs. Sugar
3 Tbs. Salt
3 tsp. Paprika
3 tsp. Oregano. We grow our own, but you can use dried.
12 oz of Canned Tomato paste.
1/2 Cup of Cilantro and or Parsley. Go with the Cilantro it really is not the same with Parsley.
